Food pairing

The Brolo delle Giare Recioto della Valpolicella from Tezza is the top wine of this vineyard. The wine is made from the grape varieties Corvina, Rondinella and Oseleta and comes from the Poiano and Nesente di Valpantena (Verona) region. The soil on which the grapes grow is rich in organic matter and calcium, potassium, and magnesium. The grapes are hand-picked in September and October, and only the best are selected. They are then destemmed and pressed, and undergo maceration in steel tanks for 30 days at a temperature of 18°C, with daily pumping over and delestage. The wine then ages for 48 months in barriques and another 12 months in the bottle.

The Brolo delle Giare Recioto della Valpolicella has already won several awards, including the Decanter Gold with 95 points for the 2013 vintage and the Winehunter Award. The wine has a dark red color and aromas of cherry jam, balsamic, and chocolate. It is a full-bodied wine with elegant tannins and pairs well with chocolate and almond desserts, such as the Torta Sbrisolona. The ideal serving temperature is 14°C.

The winery

Since 1998, the cousins Flavio, Vanio, and Federico have been running Tezza’s vineyards. The Tezza family has been producing wines for three generations and is immersed in the wine traditions of the Valpantena and Valpolicella regions.

Founded in 1960, the Tezza winery is an example of a short production chain that guarantees authenticity, transparency, and excellence. Every step of the winemaking process is traceable, from planting the vines in the family vineyards to bottling the wine. The wines are exported worldwide and express the dedication, care, and energy that the three cousins have shown as winemakers since 1998.

Tezza’s vineyards cover 28 hectares in Valpantena, in the hamlets of Poiano, Nesente, and Sezano. They are grown according to the strictest EU organic standards, without the use of chemical fertilizers, herbicides, or conventional pesticides. Tezza can thus produce organic, balanced, and elegant wines.

Corvina, Rondinella, and Oseleta are the native grape varieties that thrive on the limestone and gravelly soils of Valpantena. The grapes have their roots in the history of the area and give wines with a perfect balance between alcohol and acidity, and sweet and soft tannins.

Drying the grapes is a fundamental step in the production of Amarone and Recioto. Drying takes place in the drying rooms under optimal humidity and temperature conditions. Tezza’s cellar is equipped with a new drying room with controlled temperature and humidity.

Aging in barrels is essential for the development of the wine. The wines age in French and Slavonian oak barrels of 750 liters and French oak barriques of 225 liters. Next to the barriques is the historic Tezza cellar, where only the best bottles and vintages are stored.

The fermentation of Tezza wines takes place in large stainless steel tanks with modern systems that use automatic temperature control. The steel is flanked in the inner part of the cellar by historic concrete tanks, which guarantee a constant temperature throughout the year.
